Herring and Banana Barbeques

Herring and Banana

Ingredients

4 herring fresh or defrosted filleted 2 bananas, cut into chunks
½ green apple, sliced
½ red apple, sliced
2 x 15ml spoon (2 tablespoons) lemon juice
1 x 15m spoon (1 tablespoon) sunflower oil

Preparation

Cut each herring into 4 crosswise.
Thread herring, apple and bananas alternately onto 4 short skewers.
Sprinkle with lemon juice and cook on a hot barbecue or under a preheated grill for approximately 10 minutes, brushing with oil and turning occasionally.
Serve with mixed vegetables and rice.
